I coundn't tell you exactly whats wrong, but I would just have the battery, alternator, and starter tested.
I had a similar problem, and it turned out being a bad cell in the battery. As far as two clutches I think thats probably operator error.

If you are getting a click, lets assume it's coming from the starter. That is a good sign that the starter is getting a signal from the ignition when you turn the key to the crank position. Lets also assume you are correct when you say your battery is good. So that pretty much narrows it down to: a faulty starter or bad positve cable connection in between the starter and batttery or bad ground connection between the engine block and battery. My guess is a bad starter since this seems to happen after it starts and gets warm. One simple test to try is when this no crank situation happens again, have a friend hold the brakes and hold the key in the crank position as you lightly tap on the body of the starter with a small hammer. If the starter starts cranking over, then replace it. That is if you can get underneath that low to the ground F-Body! When you do replace it, make sure to clean your mating surface on the engine block. This is how the starter gets its ground. Also check those GM battery cable ends at the battery for being swelled with corrosion.
Good luck and let us know what you come up with!

i had a very similar problem. Thought it was that stupid clutch safety switch. The problem didnt happen till after i put the headers on. Turns out the starter was simply over heating. This could be happening to you even if your running the stock manifolds. Check the starter as vortec mentioned. Hows your voltage? Replace that clutch safety switch if you havent already. they are cheap, and it takes about 15 seconds to replace.
